Recipe: Maple chia seed pudding with seasonal fruit

We've got some good news: you can have pudding for breakfast and not feel guilty about it. With this omega-3-rich chia seed pudding, you’ll be able to tackle that load of 9 a.m. emails no problem-o.

Why are chia seeds perfect for breakfast? For one, they're packed with an impressive amount of fibre and protein. They're also are loaded with magnesium, which helps reduce stress and release tension in your body.

Combine chia seeds with other healthy fats like raw nuts or coconut and you’ve got a simple breakfast (or snack!) that'll keep you fuelled all morning.

Maple Chia Seed Pudding
Serves 1

1 cup unsweetened almond/hemp/rice milk
1-2 tbsp pure maple syrup, or raw honey
1/2 tsp pure vanilla extract (optional)
1/4 cup whole chia seeds
1 cup of the freshest seasonal fruit (we're in love with peaches at the moment!)

Our fave add-ins:
Unsweetened coconut flakes
A tablespoon of virgin organic coconut oil
Chopped raw almonds/cashews/walnuts
Hemp seeds

In a medium-sized mason jar, combine almond milk, maple syrup, vanilla and chia seeds. Secure the lid and give it a good shake until the chia seeds are well combined.

Let sit for 10 minutes and shake the jar again to make sure that there are no chunks of seeds. Cover and refrigerate overnight.

Chop fruit and stir into pudding the next day, then top with add-ins. Enjoy straight from the mason jar, and be amazed that you just had pudding for breakfast!
